Vegetarian Doenjang Jjigae (된장찌개 Korean Soybean Paste Soup) + Special Ingredient!

Let's make some doenjang jjigae (된장찌개)! This classic Korean dish is traditionally uses rice water or dashi broth. I went for a more vegetarian approach and used aquafaba (chickpea water). This created a very nutty, deep riche flavor - it's super easy to make! The doenjang broth thickened quite easily and added to the overall umami flavor of the soy bean paste soup. Chickpeas are a great source of vegetable protein - it's very versatile and you can use it to substitute meat in a variety of meals! Hope this helps.
