How To Make 된장찌개 Korean Soybean Paste Soup! Vegetarian & Vegan Friendly! Recipe in Description!
We made 된장찌개! Korean Soybean Paste Soup! We make this dish at home a lot and is one of Lus favourites so we decided to share the recipe with you too! This recipe is vegetarian & vegan friendly! Ingredients: 2L Water 500g Chinese Cabbage 180g Enoki Mushrooms 20g Birds Eye Chili 650g Tofu 8g Chicken Stock Powder 3g Miwon Seasoning 3 Heaping Tbsp Soybean Paste 1/2 Tbsp Salt Directions: 1. Fill a large pot with 2L of water and heat it over medium to high heat. Add the salt. 2. While the water is coming to a simmer, cut the mushrooms, chili, and tofu. Add the cabbage and blanch it for 1-2 minutes. 3. Remove the cabbage from the water and place it into a bowl of cold water. Allow the cabbage to cool down. 4. Once the cabbage has cooled, remove it from the water, squeeze out the excess moisture, thinly slice it, and set it aside. 5. Place a sieve into the pot of water, then add the soybean paste, mixing until the paste dissolves. Discard the remaining beans in the sieve. 6. Add the Miwon seasoning and chicken stock to the water, and mix well. 7. Once the soup is seasoned to your liking, add the cabbage, mushrooms, chili, and tofu. Continue simmering on low heat for 5-10 minutes. Notes: Soybean paste and Miwon seasoning can be found at your local Korean grocery store. We use the sunchang (brand) doenjang soybean paste. For our vegetarian and vegan viewers Massels sells a "chicken style" stock powder which is what we used in this recipe. Feel free to switch to a stock you like! The soup and ingredients are based on personal preference, so feel free to adjust them to your liking! Best served with white rice.
