Hey! It's late summer and it's time to enjoy more Korean Summer dishes🌞🏖 Last but not least, for our last episode of the new season, SOYBEANS will be the star of the show!!! Kong-guksu, soy milk noodle soup, is a dish that Koreans enjoy in summer It's so nutty and refreshing🏝 Today, I'm going to show you how my Halmoni👵🏻(a k a Korean grandma) makes it, using Put-kong(also known as edamame)! Put-kong(edamame), meaning unripe soybeans, is usually harvested during late summer in Korea They're LIMITED edition soybeans that are sweeter, softer, and richer in Vitamin C than regular soybeans💚 But hey, we can easily find these in the frozen section of the nearest supermarkets, what's the reason not to use them? Try making your own with the simplest Kong-guksu recipe on this planet🌏, because it will really blow your mind! 콩국수(풋콩국수) | Kong-guksu (Soy Milk Noodle Soup) | Serves 1 [Ingredients] [For soup(soy milk)] Frozen Put-kong(Edamame) 1C Hot water ½C Water(room temperature or cold) ½C Salt to taste(around 1 teaspoon) [For noodles] Somyeon(Korean thin noodles) 80g(3oz ) Water 5C Salt 1 teaspoon [For garnish] Julienned cucumber ⅛C 1 cherry tomato 🍜 Substitute Somyeon(Korean thin noodles) with Somen(Japanese thin noodles) or Capellini(Angel hair pasta) For variations, try Soba(buckwheat) noodles too! 🥜 Try adding nuts like cashew, pine nuts, or sesame seeds into the blender with the beans Nut butter could work too!
